I've read Bourdain's book, and he does talk about his boozing and drugs, but it's mostly about his career and the craziness of a restaurant kitchen. It's a good read - I recommend it.

Emeril was on Letterman last night, so that could be his field trip away from the wife. The spank-o-vision/smell-o-vision clue is pretty strong. The only thing that gives me hesitation is Emeril's evolution into an overweight old man. I don't think he would have the energy for three women, especially drunk.
