The pineapple honey glazed ham I made. I have no idea how I did it, but for some reason every bite of the ham has honey and pineapple flavor. I guess when I cooked it cut side down in the pan, the excess that ran down it was sucked into the meat and cooked in that way.
Mine was caramelized Brussels sprouts with slivered garlic, balsamic and bacon. Made a double batch and served them with thin spaghetti and shaved pecorino romano the night before. JSierra, how did you use the bleu? Crumbled and mixed in at the end or gratineed on top?
Loopy I caramelized the sprouts in bacon grease and once they were done I threw the blue cheese in the pan so out got a little melty. I love Brussels sprouts, sherry loopy you have great taste!
What's so amazing is that most people don't like brussle sprouts BUT roast them abs they have a completly different flavor profile that can convert the most.ardent hater into a lover of the vegetable. Even my mom hasn't tried it and she likes them. She'll go gaga even more once she does.
OMG, JSierra, I did the same damn thing with the bacon fat, then added the cooked and crumbled bacon back in at the end just before serving so it wouldn't get mushy. I looove the shallot idea too, Sherry. Whole roasted shallots? I'm dying. Maybe next year I'll put it all together. Dang, you ladies are awesome.
The crunchy, salty skin of the ducks I roasted. I had them brining for 5 days. Second place was some of my pancetta that I sauteed with Brussels sprouts.
@Bacon. Yes. It was pretty easy and not much to it but it was savory. Make a roux of 2 Tb butter, 2 Tb flour, 2 cups milk. Add 8 oz of cream cheese let it melt. Add in 16 oz cooked broccoli, salt, pepper. Pour in casserole dish, crushed crackers (I used whole wheat butter rounds) about 1 cup on top. Bake 350 for 30 min. I want to play with it and add some more stuff, but I loved how it was creamy and not dry like some broccoli casseroles I've had. Good luck with whatever one you do and let me know!
