the first one. i'll always remember the feeling walking out of the theater. it changed the world and never loses it's charm.
ESB. Always ESB. It created a cultural lexicon in "I am your father....."
A New Hope. There had never been anything like it in my then young life. Cultural lexicons? "Don't play your Jedi mind tricks ..." and "aren't you a little short to be a storm trooper?" are used often in our home.
Definitely 'Empire Strikes back' because it was directed by a real director.
I agree with almost all of the other commenters, so I will quote clerks:
'"Empire" had the better ending. I mean, Luke gets his hand cut off, finds out Vader's his father, Han gets frozen and taken away by Boba Fett. It ends on such a down note. I mean, that's what life is, a series of down endings. All "Jedi" had was a bunch of Muppets.'
And I will add that the first one is a very average movie, the prequels suck, and the other two are average at best too.
A New Hope...it was so different and exciting.

Good lord. None of them. The first three were incredibly cheesy, with bad acting and worse special effects, and the second three (which are actually supposed to be the first three, I guess) were just long and boring and pointless.

None. I don't get Star Wars movies at all. Ugh.
The first one. And not just any version but the original 1977 version. Lucas has tinkered it to death in the intervening years, and the version seen now is nowhere near as good.
The original three. Haven't seen any of the imposters.
