Giada is a real chef, but west coast. Rachael and Sandra are cooks, not chefs. But I think it's supposed to be Sandra, anyway. Enty is probably as loose on his distinction between cooks and chefs as he is on the A-B-C lists.
These "housewives" aren't always married. Or sometimes even involved in relationships. Or housewives.

Does Rachel Ray still have her talk show? I work all day, and daytime TV isn't my thing so I don't even know what is on any more. If she does then this can't be her--conflict of interest and schedules. And isn't Sandra Lee the one who tries to pull off things like a no bake cake...which is really one she bought from the bakery? So not anything near a chef. Giada is more west coast. Padma?

It's gotta be Rachel Ray. She is the fucking worst thing ever, she reminds me of Rosie O'Donnell. Her recipes always look and sound really nasty, so she's perfect for the Housewives.
Giada is west coast and too busy and too famous. Sandra probably thinks she's too famous and I doubt Cuomo would want her to do it. Rachael Ray has several shows going and doesn't need a circus like RH on her resume.
I did read something about someone turning down RHONY but I didn't pay attention and can't remember the name. It was just this morning and it was a name I recognized.
