Oh hell no, get a hotel room every time. I don't need to put up with any weird household schedules or routines or low flow shower heads.
We always stay with them and she a d I cook together for most of the meals. My husband and I do but a lot of the groceries and beer/wine.
Take everyone out to eat. If your host/hostess doesn't feel like going out, ask if they have a favorite restaurant and if they'd like you to go and pick up food to bring back home.
If they still flake on you, "no, save your money," "it's okay, really," etc. and are pretty adamant about it, don't make it difficult for them. Instead, once you get home, send a thank you card and a gift card for a restaurant (or a pre-paid Visa/MC) with a little note to 'enjoy yourselves the way I enjoyed being with you!' inside.
PS: Although no one asked, recently I traveled out of state following a sudden death, to the decedent's family/hometown. We all say "if there's anything I can do, let me know". No one can think of what they want done, when they really want to just crawl in a dark hole and hide (or drink, or or or).. I took it upon myself to take the father and brothers' dress shoes out back and give them a good polish for them. That afternoon, another friend and I took their 2 cars to a car wash then filled up their gas tanks. Your thoughtfulness will go along way, even if the recipient never knows it was you.

You should always take your hosts out to eat at least once while you are staying there. It's only good manners.
Although my dad will never, ever let me pay. He insists on paying for his kids no matter how old we get.

I try very very hard never to stay with anyone. If I do have to, then I take care of the meal the last night, and majority rules. If most folks want to go out, we go. If not, I go to the nearest market and pick up whatever looks good at the time and I cook there.

+1@Brayson. Wish I had learned this lesson earlier in life. But I was poor. I do this now. So much easier.
Go to Publix or some really nice grocery store. Get a mix of pre-made options from the deli and other items that you will have to prepare and cook. Get several bottles of wine and beer. Make dinner and/or brunch for them. If you don't know what to buy, ask them about meals they've always wanted to eat but it was too expensive. Sometimes your idea of expensive and theirs can be different.
Take them out.. Especially if they've shown so much love and hospitality. That's the least I can do.
